Chocolate and Waffles

Wow!  Time is really flying by now isn't it.  I can't believe it has already been three weeks since our last little adventure and I have yet to fill you in on all the juicy details.  Well...lean on up to the edge of your seat because here we go!

We wanted to fit one more trip in before my mom headed back to the USA. Picture this...its Friday afternoon and we are going about our business as usual (you know watching the horses in the pasture behind our house, eating some German chocolate, and talking about the weather...literally).  Then, Nate gets home from work and asks what we want to do for the weekend......let the planning begin.  That's right we literally decided Friday night, got online booked a hotel, and set off the next morning for Brussels (one of the things I am going to miss most when we leave Europe....being able to go on once in a lifetime trips at the spur of the moment)!

Why Brussels you ask...well simple 1) It was close enough to drive to and still have time to explore for  2) It was in a country my mom had yet to experience, and most importantly 3) it is know for chocolate and waffles!!!

After a morning of travel we arrived, found our hotel, and set out to enjoy the sights.  Due to our last minute planning we really had no agenda...which was kind of nice because we were able to walk around and simply take in all of the sights we encountered along the way!  It was fun to see where the cobble stone streets would take us without expectation.  I can't speak for everyone on the trip, but I had a great time wondering through town checking out chocolate stand after chocolate stand set among the European history and architecture I have grown to know and love!

After a day of exploring and a night of rest....
The last stop in our whirl wind adventure happened to be Mini-Europe!  Who would have know that the commercials on AFN would have actually provided us with some useful information.  Mini-Europe is home to dozens of scaled down replicas of Europe's most notable sights!  In one morning we were able to stand next to the Eiffel tower, The leaning tower of Pisa, Big Ben, El Plaza de Toros, Mount Vesuvius, and The Acropolis, just to name a few!   If only we would have know about this place sooner we could have combined all of our European adventures into one and saved lots on money :P

We did have a great time....Belgian waffles, Belgian chocolate, and Belgian beer....Oh, My!
